Veganuary Week Four | Favourite Meals
Hello my little dreamers!
It's week four of Veganuary, how is it's almost all over? Seeing as I've now been vegan for three weeks so far, I thought I'd tell you all my favourite vegan meals, and hopefully you can take some inspiration from it all!
Vegan Mac and Cheese
Last week, I tried making vegan Mac and Cheese for the first time, thanks to the recipe by Buzzfeed. Oh my gosh, who'd have thought it'd have tasted so great! Very simple to make, just boil some potatoes and carrots (and an onion if that's your thing, not mine...) then blend it all up with some cashews and spices (I added Turmeric and Nutritional Yeast) and pop it on top of your pasta!
Sweet Potato and Butterbean Burgers
I love bean burgers. The one's from Nando's are to die for. I thought, I could probably make myself some of those, and so one afternoon when I was at my boyfriends, I boiled some sweet potatoes, beans and spinage together, then with a fork (because my boyfriend doesn't own a potato masher...) mashed up the ingredients, adding in some tomato puree to give it a kick! I then froze them in clingfilm and took them out to fry them when I was hungry.
Sweet Potato Veggetti and Salad
I am obsessed with sweet potatoes, that's just a fact. My parent's got me a 'veggetti' maker for Christmas which turned vegetables into spaghetti. So one night I turned a sweet potato into spaghetti, and topped it with some sweet chilli tofu, sweetcorn, fresh kale and sesame seeds. It was delicious!
Taco Bell's Crunchwrap Supreme
Slight cheat one as I didn't make it, however the vegan version of Taco Bell's Crunchwrap Supreme is so scrumptious and I want ten now. You won't find it on the menu, however when you get to the till, just ask for a Crunchwrap Supreme but swap the meat out for beans, and the nacho cheese and sour cream for guacamole. Even my meat eater boyfriend thought it was delicious, so if you're ever near a Taco Bell, go in and grab a bite! (Also the chips are AMAZING!)
Vegan BBQ Tofu Pizza
As I'm sure you're all aware, it's rare to find a vegan pizza, especially with all this cheese made from dairy cows around in supermarkets. However, the genius plan to get a simple vegan pizza base, covering it in tomato sauce, vegan cheese and toppings of your choice, has changed my life. The first pizza I made, I coated tofu pieces in BBQ sauce and topped my pizza with sweetcorn, spinach, black olives and of course the BBQ tofu. It's super filling and tastes so good!
Chocolate Banana Milkshake
This has to be my greatest creation yet.
Above you can see a banana milkshake, made with frozen bananas, soya milk, cocoa powder, molasses and strawberries. For the first experiment, I maybe added too much molasses (dark brown gloop) but the strawberries were a great decision. Can't wait to do it again!
